eclosing

So I just called some of my old coworkers. Soooo nice to talk to them. and when i msned another old coworker to tell him, he said they had already called him to brag. the three musketeers. these are the same three who broke into my house when i had company, just to freak us out. I miss those guys! we had some good times, even considering how messed up our village was.

I have lost the passion for cooking. There's just no point when it's just me eating. I need culinary inspiration.. so if you have cooked something fantastic lately, tell me all about it. or even if it was something someone else cooked... I just feel like I have eaten everything a thousand times.

hmm.. nothing much else going on here. minus 6 celsius, couple inches of snow on the ground. sunrise, 8h30. sunset, 13h47. these days are getting short!

Risotto!
Recipes abound on the internet, but here's the basic idea:
1. make a pot of broth, hot on the stove. I usually make 7 cups or so, from veggie boullion.
2. sautee onions and garlic in olive oil and butter, WITH arborio rice (check a real recipe for the time)
3. once the rice has had a few minutes to think about onions and hot places, start adding broth to the rice. A cup at a time, then stir, slowly. Turn down the heat to medium or med-low; the broth should just simmer. The rice will absorb the broth, and when there's not much broth left, add more broth. Keep doing this for 40 min or so. Make more broth if needed.
4. the rice eventually will reach a delicious thick gloppy consistency. When it's ready, the spoon will stand up in the middle, and the individual grains will be chewy but not at all crunchy. If you're not sure, let it keep cooking. Add more broth, stir slowly. It's a great arm workout.
5. When it's ready, add another 1/2 cup or cup of broth, and a big mound of fresh-grated parmiggiano reggiano or romano cheese. Other hard cheeses would probably be okay; powdered parmesan won't be; and probably if you can't get suitable cheese just adding a bit of cream and butter would be nice. Stir
6. serve a glop in a bowl, topped with more fresh grated parmiggiano reg. Sit back, close your eyes, oh yeah. Comfort food.
7. Advanced risotto: you can add all kinds of stuff to risotto. Mushrooms, carrots, asparagus, green peas, spinach, squash chunks. If it's big durable stuff, add with onions and garlic at beginning. If it's delicate or small, add sometime in the middle of the process.

Black beans and rice!
1. Start a pot of whatever rice you have around (regular white, basmati, even sushi rice will work. not arborio.)
2. Separately, sautee onions and garlic in olive oil or butter until the onions are transparent. Add garlic a bit later than onions so as not to burn it. I usually use one whole good-sized onion and three or four cloves of garlic; onion chopped roughly and garlic minced pretty fine.
3. Add black beans. I usually use 2 cans of black beans, drained and rinsed. You can use dried if you have them; I don't know how they work. But: in with the beans.
4. Let the beans cook and warm and absorb goodness for at least 10 minutes. Season as you like. I usually use black pepper, cumin, a bit of cayenne powder. Can also use basil, cinnamon for a weird kick, rosemary. You could add hot peppers if you have yogurt on hand to eat with.
5. When rice is done, usually beans are done too. Serve beans on top of rice, mix them liberally with fork, top with grated cheddar and go to town.
6. Garnish with pineapple, mango, or peach; fruit salsa or tomato salsa; yogurt if it's spicy. You can cook apple chunks into it if you like sweet entrees.
This is my go-to comfort food. Not to be eaten the night before a big date or parent-teacher conference.

Chili!
1. Similar to beans and rice: make rice, sautee onions and garlic.
2. Add to onions and garlic: can of whole peeled tomatoes. Other chopped veggies (celery, bell peppers, carrots, cashews are traditional). TVP or ground beef (you'll have to figure out the ground beef angle on your own). Can or two of kidney beans, drained; can of another kind of beans if you like.
3. Let simmer. Chop up the tomatoes with your spoon, awkwardly spraying yourself with tomato juice and cursing. Add 3 tblsp or more of chili powder; extra cumin and cayenne, black pepper, basil, oregano, maybe cinnamon or other spices as you like. Add the green spices toward the end. Otherwise let all this cook, slightly bubbling, together for as long as you can stand. At least half an hour, better if an hour.
4. Serve over rice.
Yum.

All of these are good for leftovers too.
